I have very rarely seen a 2 seater where the passenger sits behind the driver, are there physics concerns going over a certain overall wheelbase length? Does it matter as long as your center of gravity stays low?

Using a factory front suspension from a car the wheelbase dictates the Ackerman angles and it can be fudged some but not a lot before you will get tire scrub in a corner. Say you do use the VW Bug Beam, a Bug is 94.5 inches Center to center of the front/back wheels. You may get away with 105 inches or 85 inches before you notice the effect.

Ahhh. Well that is good to know information. So to get the best handling aim for same wheelbase.

A big benefit to tandem is that you don't have unequal left/right weight distribution with and/or without a passenger.
And minimal change in front/rear weight distribution if the passenger seat is near the CG.

Even if tandem seating is more efficient, I think more people like side by side seating for both looks and having the passenger beside them for conversation, etc. Here is mine.
